Mashed turnips

I've tagged this as an American dish, for no better reason than because we're American and we made it. Turnips are a cosmopolitan food and mashing them is as obvious as it is delicious.

Ingredients

  • 2 very large turnips
  • 1 large potato
  • 3 tbsp butter
  • 1/2 small onion, or 1/4 large onion, very finely diced
  • 1/2 tsp black pepper
  • 1/2 tsp dried sage
  • salt to taste
  • 2 tbsp heavy cream

Directions

Peel and cube turnips and potato, cover with salted cold water and bring to a boil. Reduce heat to simmer and cook 15-20 minutes, until both turnips and potato are fork tender. Remove from heat, drain and mash until smooth.

Heat butter in a small pan on medium-high heat until sizzling, then add onion. Saute, stirring frequently, until onion is golden brown and fragrant. Add butter and onion to mashed vegetables. Add black pepper and sage and mix. Finish with heavy cream and mix thoroughly.

Serves 6.
