Creamy jalapeño sauce

This is an attempt to clone the faintly sweet and spicy mayonnaise-based sauce that some fast food outlets like to spread inside quesadillas and other Mexican food items. Taco Bell calls this "creamy jalapeño sauce", and die-hard Taco Bell fans--which are a thing that apparently exists--refer to it as "CJS". This isn't an attempt to be super faithful to Taco Bell's specific recipe, which definitely involves blending ripe jalapeños or chipotles into a mayonnaise base. Think of this instead as the thing you smear inside a chicken quesadilla to get your kid to pronounce it better than fast food, which is what it is for me.

Ingredients

  • 1 cup mayonnaise (use vegan mayo if you swing that way)
  • juice of 1/2 lime
  • 2 tbsp my taco seasoning
  • 1 tsp sugar
  • 1 tsp paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp cayenne pepper powder
  • 1/4 tsp ground black pepper

Directions

Mix ingredients and store in a resealable container in the refrigerator for about 2 weeks.

Notes

To make the aforementioned kid-pleasing quesadilla, you'll need a couple of fajita-size flour tortillas, some salsa chicken, some shredded cheese that melts well, maybe some fajita veggies if you're feeling feisty, about a tablespoon of this sauce, and a lightly oiled cast iron pan.
