A mixture of spices used in chickpea (chana / chole) dishes like [[chana masala]]. This is one way to make it fresh, but it can also be bought pre-ground at most any Indian grocery store.

A mixture of spices used in chickpea (chana / chole) dishes like chana masala. This is one way to make it fresh, but it can also be bought pre-ground at most any Indian grocery store.

Ingredients

  • 10 green cardamom pods, seeds removed and pods discarded
  • 10 cloves
  • 10 black peppercorns
  • 1 inch piece true cinnamon (e.g. Ceylon/Mexican cinnamon)
  • 2 tsp coriander seeds
  • 1 tsp cayenne pepper powder
  • 1/2 tsp turmeric

Directions

Grind all listed ingredients together in a spice grinder. Makes about 2 tbsp.
