A mixture of spices used in chickpea (chana / chole) dishes like chana masala. This is one way to make it fresh, but it can also be bought pre-ground at most any Indian grocery store.
Ingredients
- 10 green cardamom pods, seeds removed and pods discarded
- 10 cloves
- 10 black peppercorns
- 1 inch piece true cinnamon (e.g. Ceylon/Mexican cinnamon)
- 2 tsp coriander seeds
- 1 tsp cayenne pepper powder
- 1/2 tsp turmeric
Directions
Grind all listed ingredients together in a spice grinder. Makes about 2 tbsp.
